Yummy Recipes That You Should Try This Pancake Day!

It seems like we are flying through the year with New Year’s celebrations taking place with what only feels like yesterday. In what seems like an ever-busy social calendar, one of our favourite days is swiftly approaching! That’s right, Pancake Day is coming up in just a few short weeks with the big day being 1st March 2022. Here at Merci Maman we have decided to share some of our favourite pancake recipes that both you and your kids could take part in making. Keep reading to also find out what our team’s favourite pancake toppings are to give you some kitchen inspiration!

Pancake Day Classics

If you like to keep things traditional, here is a refresher on how to make simple and classic recipes that the whole family could get involved in!

Super Easy British Pancakes

A recipe that for some of us might feel nostalgic. These pancakes are an easy treat that you can make with your family this pancake day.

  • 100g plain flour
  • 2 large eggs
  • 300ml milk
  • 1 tbsp sunflower or vegetable oil, plus a little extra for frying
  • A little salt
  1. Place the plain flour, eggs, milk, 1 tbsp oil and a pinch of salt into a bowl and whisk into a smooth batter.
  2. Set a frying pan over a medium heat and carefully grease it with some oil.
  3. Once hot, add your batter and cook for 1 min on each side until golden.
  4. Serve with toppings of your choice

Fluffy American Style Pancakes

These American style fluffy pancakes are great for stacking high and filling with an abundance of toppings!

  • 200g self-raising flour
  • 1 ½ tsp baking powder
  • 1 tbsp golden caster sugar
  • 3 large eggs
  • 25g melted butter, plus extra for cooking
  • 200ml milk
  • Vegetable oil, for cooking
  • A little salt
  1. Mix the self-raising flour, baking powder, golden caster sugar and a pinch of salt all together in a large bowl.
  2. Create a well in the centre of your dry mixture with the back of your spoon
  3. Add in the large eggs, melted butter and milk.
  4. Whisk together until smooth then pour into a jug.
  5. Heat a small knob of butter and a teaspoon of oil in a frying pan over a medium heat. When the butter looks frothy, pour in small batches of batter that are approximately 8cm in circumference. Make sure you don’t place the pancakes too close together, so they don’t spread and stick together whilst cooking. Cook the pancakes for 1-2 mins on each.
  6. Serve your pancakes stacked up on a plate with any of your favourite toppings.

Health-Conscious Pancake Day Alternatives

If you want to get involved in pancake day festivities but in a healthier way, here are some nourishing alternatives that the whole family can try

Vegan Savoury Pancakes

If you’re not too big on sweet treats why not try these savoury pancakes instead!

  • 150g self-raising flour
  • ½ tsp baking powder
  • 100g garlic & herb soft cheese alternative
  • 200ml plant milk (such as oat or soya)
  • ½ small bunch of chives, finely chopped
  • 1 large vine tomato, halved
  • 4-6 portabellini or baby portobello mushrooms
  • 1 tbsp light olive oil, plus more for cooking
  • A few thyme sprigs
  • A little salt
  1. Put the flour, baking powder and a pinch of salt in a bowl and whist to combine.
  2. In a separate bowl, whisk together 50g of the garlic & herb soft cheese alternative with the plant milk until combined. Stir in half the chives, then pour into the dry ingredients, whisking to form a smooth, thick batter.
  3. Heat the grill to a medium high. Arrange the tomato halves, and mushrooms on a tray. Season with the thyme leaves and drizzle over 1 tbsp oil, rubbing the oil into the mushrooms. Grill for 10-15 mins until softened and the mushrooms are wilted and tender.
  4. Grease a large pan with some olive oil and place over a medium heat. Add 2 tbsp of the batter to the pan to make small, round pancakes. Cook for 2 mins until the edges start to set and bubbles rise to the surface. Flip and cook for another 2-3 mins until light golden and cooked through.
  5. Spread the remaining soft cheese alternative over the pancakes. Top each with a tomato half and the mushrooms. Season and scatter over the remaining chives to serve.

Oat and Banana Healthy Pancakes

These healthier pancakes use rolled oats and bananas for natural sweetness!

  • 125ml oat milk
  • 2 eggs, separated
  • 1 small banana
  • 100g rolled oats
  • 2 tsp baking powder
  • Oil
  1. Put the oat milk, egg yolks, banana, oats and baking powder in a blender and blend till smooth
  2. Whisk the egg whites until they hold stiff peaks. Whisk 1-2 tbsp of the whites into the batter, then fold in the rest.
  3. Heat a non-stick pan over a medium heat and grease with oil, pour about 2 tablespoons of batter into the pan and cook for 1-2 mins, until the base sets and bubbles appear all over the top. Flip and cook the other side for a minute.
  4. Serve with your favourite toppings

  • Our Marketing Assistant Olivia and Marketing Manager Cléa both love a classic, with lemon and sugar at the top of their lists.
  • Strategic Assistant Claire and Marketing Intern Zeynab both can’t resist Nutella on top of their pancakes.
  • Meanwhile, our Marketing Assistant Alexia is torn between either peanut butter and berries or bacon and maple syrup.
  • Marketing and Communication Director Alix and Graphic Designer Tamires both like to have ice cream and chocolate sauce topping their pancakes.
  • Marketing Intern Mona likes to keep things simple with just maple syrup.
  • Whereas Head of Brand Marketing Marine and Key Accounts Manager Clemmie both love chocolate and banana on top of their pancakes.
  • Marketing Manager Chiara is a big fan of plain strawberry jam on top of hers.
  • Visual producer Will likes to stick to lemon and sugar (but can’t help himself if there’s Nutella available).
  • Our Marketing Manager Eve goes a little out of the box with baked beans and sausage!
  • Whilst Manager Julia likes cinnamon and sugar on hers.
